Observation: Fruit flies are swarming around cart with juice dispenser.
This dispenser/cart is poorly designed, with multiple surfaces that are difficult to clean. Sticky juice residue is attracting flies and is almost impossible to clean proerly.
Cart should be rebuilt so that the motors and any other difficult-to-clean parts are fully covered to facilitate easy cleaning. Or remove juice cart and use juice in disposable containers.

Comments

Premise is very clean and organized.
Fridge is 4 Celsius.
Hot holding is >60 Celsius.
Dishwasher reached 76 Celsius at plate level.
No sign of rodents.
Sanitizer spray is 200 ppm quats.

***Note that there is only one hand sink in one corner of this very large kitchen. Standard practice is for every work/prep station and dishwashing area to have a hand washing sink in close proximity. Plating area and dishwasher are very far away from the hand sink. Recommend the installation of at least 2 or 3 more hand washing stations.
