Observation (CORRECTED DURING INSPECTION): Butter chicken gravy's internal temperature was measured at 25 degrees C. The bag of gravy was placed into the hot holding unit less than 1 hour prior to an inspection. The gravy was reheated boiling point at the time of inspection.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1. QUATS sanitizer bottles were measured at 100 ppm as per test strip. The operator replenished all of QUATS sanitizer bottles with 200 ppm QUATS sanitizer - operator confirmed the concentration with test papers.
2. Chlorine residue was not detected from the low temperature dishwasher. Water from the cleaning cycle was murky and visibly soiled. The chlorine sanitizer bottle looked aged and the chemical itself was discolored (yellow to clear). The chlorine sanitizer bottle is replaced with a new bottle. 50ppm chlorine was detected on the plate level. After multiple cycles, water from the dishwashing cycle became clear.
3. All food contact surfaces (e.g., utensils) are to be cleaned and sanitized again. The operator directed on-site staffs to run all food contact surfaces through the dishwasher.

Observation: Multiple foods throughout the facility were not covered adequately. E.g., inserts in the coolers, open bag of dry foods, etc.
Corrective Action(s): Provide adequate cover for all food inserts in the cooler (e.g., lid, plastic wrap, foil, etc.). Any open bag of dry goods (e.g., flour) must be transferred to food grade container with tight fitting lid. Correct this by: May 27, 2021
