- Observed raw fish in room temperature - cold to touch.
Corrective Action(s):
- Do not store potentially hazardous food items in room temperature. If this violation is observed again in the future, operator will be asked to equip an extra prep cooler. Fish was brought back to walk-in cooler at the time of inspection.

Observation (CORRECTED DURING INSPECTION):
- No sanitizer in use in the kitchen.
Corrective Action(s):
- Always make two sanitizer buckets for kitchen use before store opens. Staff made bleach sanitizer (100ppm) at the time of inspection.

Comments

- All handsink are fully equipped with hot and cold running water, liquid soap and paper towels in dispensers.
- All coolers at 4C or below.
- All freezers at -18C or below.
- Hot held rice at 60C or above.
- Low temperature dishwasher reached 46C on plate level during the final rinse and the rinse water measured at 100ppm chlorine.
- Bleach sanitizer in spray bottle (for the front of the house) measured at 100ppm.
- Invoice was reviewed for raw frozen meat.

*Ensure to do floor cleaning everyday - including any grease spills underneath the deep fryer.
*Ensure to turn on the hot water line for the mechanical dishwasher if it is turned off every night.
*Remove cardboard used as liners and containers.

Permit was hand delivered. Ensure to post it on a conspicuous location.
