Observation (CORRECTED DURING INSPECTION): 1) Mussels in the inserts noted at 14 deg. C internally. A staff reported that it was transferred to the insert at 10:30 am (5 hours ago)
2) Cooked broccoli, shredded vegetable and salad lettuce in the side dish cooler inserts noted at 8 - 10 deg. C. These were also prepared 5 hours ago. Overstacking noted in the side dish cooler.
3) Bags of squid near the stove noted at 4 deg. C on the surface. The squid was still in the frozen state. A staff reported that it was just delivered.
Corrective Action(s): 1) Mussels were discarded.
2) Cooked broccoli, shreded vegetable and salad lettuce were discarded. Side dish cooler unit is functioning properly. Overstacking is expected to be an issue. Store fewer food containers to promote air circulation.
3) Squids were transferred to the walk-in cooler.

Observation (CORRECTED DURING INSPECTION): 1) Containers and bags of foods (salt, pepper powder, dried seaweed, etc) stored in the back corridor. This is a repeated violation.
2) Condiment squeeze bottles for customers stored below raw meats.
Corrective Action(s): 1) Do not store any food items in the back corridor.
2) Ensure raw proteinaceous foods (eg. chicken, beef, pork) are stored below cooked, ready-to-eat products.

Observation: Mildew and grime building up inside of the ice machine.
Corrective Action(s): Empty out the ice machine. Clean and sanitize with 100 ppm bleach solution (1 tsp + 1L water)

Comments:
-Handsink stations equipped with hot and cold running water, liquid soap and paper towels. Note: A handsink near the dry storage area requires liquid soap. Soap bottle is almost empty.
-General sanitation is adequate except for the ice machine.
-No signs of pest.
-Bleach sanitizer bottles noted at 100 ppm.
-High temperature dishwasher final rinse cycle noted at 76 deg. C
-Glasswasher: 81 deg. C
-Clean-in-place equipment such as a slicer was properly cleaned and sanitized
-Freezer #4: inserts 0 deg. C, bottom -10 deg. C
