Observation: Ice machine requires cleaning due to mould build up
Knives observed being stored on the side of all 3 cutting blocks. The sides of the cutting blocks are not being cleaned creating a cross contamination with clean knives. This was a contravention addressed in my last inspection report and was corrected upon the followup inspection when containers were installed to store the knives. Containers present but were not being used to store knives.
Corrective Action(s): Ensure machine is cleaned frequently
Remove all 3 wood slats on the sides of all 3 cutting blocks so that there is no opportunity/temptation to store knives there anymore, thus ensuring that clean knives will only be stored in the containers.

Many containers observed without lids or covered with saran wrap

Observation: Oil observed smoking and dark in color in one of the deep fryers. Manager stated the oil is filtered daily and the oil changed twice a week.
Clean oil droplets adhering to supression piping in exhaust canopy as they can drip into food being prepared
Clean underside of shelving above hot holding unit due to food splatter build up.
Clean wire rack cart near back door
Clean door handles to both the walk in cooler and freezer
