Observation: - Build up of debris/grime on floor under counter adjacent to handsink at cashier/front service area
- Clutter/dust/debris on floor in back storage area. Display unit not in use stored in front of warewashing sink
Corrective Action(s): - Clean up debris/grime noted above.
- Re-organize back storage area to ensure floor is kept clear to facilitate cleaning and monitoring for pests
- Remove any items no longer required for the operation of the business.
- Ensure access to warewashing sink is never obstructed. [Corrected during inspection]

Comments

- Handwashing sinks supplied with hot and cold water, liquid soap and paper towel.
- Coolers were operating at acceptable temperatures (4C or colder):
- Walk-in cooler 4C
- Single door undercounter cooler 2C
- Hot dog condiment cooler 4C *Temperature was initially 6C, but dropped to 4C. Ensure temperature is monitored to ensure 4C or colder is maintained
- Open display cooler 2C
- Freezers were maintaining product in a frozen state:
- 2 door True freezer -19C
- 2 door Beverage Air freezer -15C
- 2 door display freezer -21C
- Ice cream display freezer -23C
- Hot holding of potentially hazardous foods was at acceptable temperatures (60C or higher)
- Hot dogs 61C
- Taquitos 63C
- Chicken strips 69C
- Temperature monitoring in place. Records appear up to date.
- Quats sanitizer present from dispenser at 3 compartment sink and in spray bottle at front service counter. Concentration measured 200ppm.
- Pest control contract in place with monthly service. Most recent service report (5-Nov-2019) viewed at time of the inspection.
- Asst Mgr present and has completed Foodsafe level 1 equivalent.
