Observation (CORRECTED DURING INSPECTION): - No food-contact surface sanitizer was readily available for use.
- Low-temperature chemical dishwasher was not in use and staff onsite did not know how to turn on or set up dishwasher.
- Three-compartment warewashing sink was not set up for manual warewashing.
Corrective Action(s): - Staff prepared fresh bleach sanitizer soution at time of inspection. 100 ppm chlorine detected.
- Ensure dishwasher is in use. When dishwasher is not in use, the three-compartment sink MUST be properly set up for manual warewashing: 1st sink - Hot soapy water for washing; 2nd sink - clean hot water for rinsing; 3rd sink - 100 ppm bleach solution for sanitizing. Dishes must then be air-dried and stored on designated clean dish racks.

Observation: Mouse droppings noted in corners and along perimeter of kitchen walls.
Corrective Action(s): - Remove all droppings and thoroughly disinfect affected areas with 1000 ppm bleach solution.

- Re-seal any holes and entry points
- Keep all racks and equipment away from the walls
- Keep lowest shelves empty
- De-clutter all storage areas

Comments

- Note: Facility has undergone a name change (Spice Love Pizza & Wings). Application form to be completed and submitted to health inspector.

- Hand sinks were properly supplied with hot and cold running water, liquid soap, and paper towels.
- Reviewed requirements for having food-contact surface sanitizer readily available during all hours of operation. (See violation code 302 above)
- Reviewed manual warewashing instructions (See violation code 302 above)
- Thoroughly deep clean the dishwasher and ensure it is in use.
- All coolers measured at 4C or colder
- Freezers measured at -18C or colder
- No hot-holding at time of inspection.
- Food storage practices satisfactory - all food stored in pest-proof containers and properly covered.

**Major improvement in sanitation is required. Monitoring for rodent droppings must be done on a daily basis, and droppings must be removed and affected areas thoroughly bleached whenever droppings are found.
