Observation (CORRECTED DURING INSPECTION): One cloth sanitizer bucket contained approximately zero quats sanitizer.
Corrective Action(s): Refilled during inspection. Ensure all cloth buckets, sanitizing sinks and spray bottles of sanitizer are maintained at 200ppm quats.

Observation (CORRECTED DURING INSPECTION): One mesh bag of onions was observed on the floor in the dry storage area.
Corrective Action(s): Moved to shelving. Ensure all food items are stored off the floor.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: (1) Plastic spikes on meat slicer hand guard/pressure plate have been shorn off by the slicer, leaving a rough and cracked surface on the face of the guard (which is in contact with food).
(2) Paper towel dispenser at rear hand sink is broken.
(3) Cold tap at utility sink in front area is leaking. Operators have switched the tap off at the wall.
Corrective Action(s): (1) Replacement guard is on order. Ensure extra attention is paid to the cleaning and sanitizing of the damaged piece, as it may trap food debris. Ensure no loose pieces of plastic contaminate the food.
(2) Replace the dispenser by next week (2nd August 2016). Ensure a paper towel roll is available at this sink in the interim.
(3) Have the tap serviced and working by next week (2nd August 2016).

*General sanitation excellent. No pest issues observed during inspection.
*Hot holding units operating at 60 C or higher.
*Hand sinks equipped with warm water, liquid soap and paper towels (see violations section).
*Cooler and freezer temperatures satisfactory. Note: walk-in freezer was measured at -8 to -10 C, but a delivery was recently loaded. Ensure temperature comes down to -18 C by the end of today.
*Organization and storage of food satisfactory in cooler units.
*Quats sanitizer available from dispenser at 200ppm.
*Full 3-compartment warewashing methods in use.
*Products in storage are labeled with dates, and are wrapped to protect from contamination.
*Discussed storage of condiments at front of service area with operators. All products appear to be shelf stable.
*Meat slicer and other tools and equipment maintained in clean condition. Ice machine is maintained by an external contractor.
*Glove use and hand washing satisfactory at time of inspection.
