Observation (CORRECTED DURING INSPECTION): Can opener blade observed to have built-up of food debris. Heavy food debris observed to be on food contact surfaces on top of stainless steel work tables and tabletop of preparation coolers. Operator informed that the stainless steel table and table top of preparation cooler is cleaned using multi-surface cleaner.
Corrective Action(s): Clean and sanitize the aformentioned items. Can opener blade must be cleaned and sanitized after each use. Food contact surfaces must be cleaned and sanitized with food grade sanitizer not only multi-surface cleaner.

Observation (CORRECTED DURING INSPECTION): Observed several items in the under counter cooler to be uncovered, an egg to be cracked.
Corrective Action(s): Ensure all food are covered in the under counter cooler. Discard the egg.

Observation: Heavy built-up of food debris underneath and around the following areas:
-Dry storage rack in the dry storage area.
-Preparation coolers.
-Cookline.
-3-compartment sink area.
Corrective Action(s): Clean and sanitize the aformentioned areas. Deep and thorough cleaning must be conducted daily underneath hard to reach areas to prevent build-up of food debris. Corrected by: April 12, 2023.

Routine Inspection conducted today.

Handwashing sink well equipped with hot and cold running water, liquid soap, and paper towels.
QUATs spray bottle and dispenser at 200ppm. 3-compartment sink available. High-temperature dishwasher measured at 71.4C final rinse temperature.
Prep coolers and stand-up cooler measured at 4C or lower. Stand-up freezer measured at -18C. Hot-holding unit not in use at the time of inspection.

NOTE: Chicken is cooked to 74C and cooled within 30mins to an internal temperature of 30C prior to cooking it further with rice together in the combi oven.
