Observation: 1) High temperature dishwasher registered at 70.6 degree C at dish surface.
2) Sanitizer bucket registered at 50ppm QUATS and cloth was not completely submerged in sanitizer solution.
Corrective Action(s): 1) Ensure that high temperature dishwasher is serviced such that it is achieving 71 degree C or more at dish surface.
2) Ensure that sanitizer buckets are registering at 200ppm QUATs and that cloths are completely submerged in solution

Observation: 1) Scoops observed inside food product.
2) Unprotected food items (cinnamon buns) displayed above sneeze guard.

Observation: Rodent droppings observed near and behind the dough mixer and inside the dough bowl.
Corrective Action(s): Contact certified pest control program to ensure the remediation of pest in the premises.

Observation: Back exterior door was unattended and propped open by milk crates. When door was closed a visible gap was seen between the doors.
Corrective Action(s): Ensure that back door remains closed and corrective measures are taken to close any entrances for pests into the premises.

All hand washing stations supplied with hot and cold running water, liquid soap and paper towels.
Note: Do not store paper towels on top of ice machine, store paper towels near hand washing station.
All cooler temperatures were at or below 4 degree C.
All freezer temperatures were at or below -18 degree C.
Hot holding temperatures at or above 60 degree C.
General sanitization satisfactory at the time of inspection.
Sanitizer bottle and bucket registered at 200ppm QUATs (exception for one bucket. See above).
