Observation (CORRECTED DURING INSPECTION): A bucket of fried chicken strips cooling in too large of a container to adequately cool and meet -temperature at 25 deg C and has been there for over 2 hours:

Cooling Step 1: 60 deg C to 20 deg C within 2 hours

Worker did not use the speed racks provided
Corrective Action(s): Discard chicken strips

Use your speed racks as per your Food Safety Plan for adequate cooling.

Thickness of food on the trays should not be greater than 2 inches
