Observation (CORRECTED DURING INSPECTION): When reviewing Manual Washing Method at dishpit operator is not following the correct procedure for sanitizing:

You must be following
Step 1 wash with warm water and detergent
Step 2 rinse thoroughly with warm water
Step 3 sanitize with bleach at >100ppm (1/2 teaspoon bleach + 1 liter water)
Step 4 air dry

Noted: personal effects in dishpit area --> dishes/drying rack/coffee maker

Corrective Action(s): Provided Manual Wash sign to be posted

Remove all personal effects from the dishpit area --> you have a small kitchenette upstairs that should be used for employees otherwise relocate it to the front office/retail

Corrective Action(s): Operator will need to go professional pest control until the problem is removed

Open bulk foods not in rodent proof containers
Corrective Action(s): The back door and garage bay doors must be closed tight unless actively shipping goods.

If you need extra ventilation you will need to install a tight fitting screen door

Keep open bulk food bags in rodent proof containers as an added deterrent

Observation: Mouse droppings observed in the back warehouse area near the west side door and corner there, near the bay doors.

Did not observe foods tampered/contaminated while onsite

Clean and disinfect all areas with rodent droppings

Hire a professional pest control for regular monitoring and services
