-Follow-up inspection to August 16, 2023.
-Cooked soups are cooled in a water bath and transferred to the walk-in cooler. Soups made the previous day were at 4C to 5C. Recommend cooling foods rapidly in the walk-in freezer.
-Both handwash stations were unobstructed and supplied with hot and cold running water, liquid hand soap, and single use paper towels. Chef indicated hand hygiene practices have been reviewed with staff. Additional supply of gloves has been obtained to allow staff to frequently change gloves, when gloves become contaminated. Facility has signage posted to remind staff to properly wash their hands and observe good hand hygiene practices. Repeat poor hand hygiene practices will result in the issuance of violation tickets.
-Handwash station has been serviced and is no longer leaking.
-Did not observed food items stored on the floor at the time of inspection.
-Back screen door was kept closed at the time of inspection.
-Door seals have been cleaned and were found to be clean and sanitary. Ensure all equipment is maintained in a clean and sanitary condition on a daily basis.
-Cardboard has been removed from the cook line and surfaces were smooth, non-absorbent, and easily cleanable.
-Rice cabinet had a time tracking sheet to verify the rice was used/discarded within 2 hours.
-Chef had FOODSAFE Level 1 training (valid until June 29, 2024). Manager indicated he will be completing FOODSAFE Level 1 or equivalent training.
