Observation: Five to ten drain flies are still observed on site. Population has decreased since last inspection. Fly traps are in place in non-food preparation areas. Pest control company is contracted to assess and apply treatment.
Corrective Action(s): Continue drain fly treatment for the next few months until there are no drain flies on site. Change the fly traps frequently to prevent contamination of food. Contact pest control company to assess and apply treatment as frequent as necessary to remove current population.

Observation: Build-up of food debris and grease still observed behind all preparation tables, dishwashing area and in storage areas.
Corrective Action(s): Remove all equipment from the kitchen. Power-wash to remove build-up of grease/debris. Deep clean all shelves in the dry storage area to remove food spills. Submit photos to the health inspector via email once the premise has been deep cleaned.

Observations:
- Walk-in cooler at 2'C
- Walk-in cooler has been repaired. No leaks observed
- All sandwich coolers at or below 4'C
- Temperature log is available and maintained on site - good!
- Staff stated that smaller batches of curries are prepared at a time to prevent time-temperature abuse OR larger batches are immediately frozen after preparation
- Thermometers are available in all cold-holding units on site - good!
- General sanitation has improved significantly (still some deep cleaning required, refer to violations above)
- Clutter has been removed in both dry storage areas. All floors are clear from obstructions and are now easy-to-clean and sanitize by staff
- All hand washing stations are unobstructed and adequately supplied with hot and cold running water, liquid soap and paper towel
- Bleach sanitizer in labelled spray bottles (X2) measured at 200 ppm chlorine concentration with test strip
- High-temperature dishwasher measured at 72'C at plate surface (above minimum required final rinse temperature of 71'C)
- Ice machine has been cleaned and sanitized. Plastic wrap on the machine has been removed.
- All food observed stored covered and at least 6 inches off the floor
- No signs of recent rodent activity on site
- Professional pest control company is contracted
- Pest reports available on site and verified during inspection
- Fly traps observed in place in non-food preparation areas
- Mechanical rodent traps are observed in place
- Raw meat stored away from ready-to-eat foods
- Staff observed wearing hair nets and gloves
- FOODSAFE Level 1 trained equivalent staff available on site

*Reminders:
- No food observed stored in the insert in the cooler in front of the cooking line (next to the 2-compartment sink). Continue keeping this insert empty until an updated food safety plan is submitted to the health inspector, reviewed and approved.
- Submit pest control reports at least monthly to the health inspector for review
- Maintain a temperature log for all coolers, freezers and hot-holding on site
- Obtain chlorine test strips to test bleach sanitizer strength as per approved sanitation plan
- Gloves are NOT a replacement for proper, frequent hand washing. Ensure staff are washing their hands between tasks and between changing gloves.
