Observation: During time of inspection, handwashing station located by main cook line could not be used. Large baking sheet was placed over top, rendering the handwashing station inaccessible.
Corrective Action(s): ALL HANDWASHING STATIONS MUST BE ACCESSIBLE AT ALL TIMES AND ADEQUATELY SUPPLIED WITH HOT/COLD RUNNING WATER, LIQUID SOAP AND PAPER TOWELS

1. Rodent droppings were found on some shelving throughout premises.
No food items/ food contact surfaces affected.

2. Main prep/ line cooler requires cleaning within, food spillage accumulation on fan covers
3. Cutting boards require deep and thorough cleaning
Corrective Action(s): 1. Thorough and deep cleaning required throughout facility, staff and owners must clean frequently
2. Deep cleaning required of all equipment including: main prep cooler, walk-in cooler shelving, etc
Move all equipment from wall and clean
3. Ensure that cutting boards are scrubbed and sanitized to remove food staining and any food residue

- Food grade chlorine sanitizer solution available, concentration of sanitizer 100ppm
- Low temperature dishwasher available during time of inspection, concentration of chlorine sanitizer at least 50ppm during final rinse
- Pest control in place, you must follow Pest Control Operator's recommendations
