Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: 1. Bowl and dough hook of dough mixer was not cleaned and sanitized after use. Restaurant opened at 4 PM when the food contact surfaces of the dough mixer still had flour present over them. This is a repeat violation.
2. Food press contained food debris over the top component. Blade component was previously detached from it. This is a repeat violation.
3. Inside surfaces of the pizza prep. cooler were not in a clean condition as buildup of grease and food debris was evident.
Correction: 1. Operator moved the dough mixer bowl and hook near the 3-compartment sink for manual ware-washing. Make sure the bowl and dough hook is washed, rinsed, sanitized, and air dried prior to the next use. Cleaning frequency should be every 4 hours between use and after final use each day.
2. Make sure the food press is washed, rinsed, sanitized, and air dried every 4 hours between use and after final use each day. Operator had a written sign to remind staff to clean and sanitize it and mentioned that they would ensure the staff member cleans and sanitizes it today.
3. Clean and sanitize the inside walls and ceiling of the pizza prep. cooler to remove the buildup of grease and food debris; Correct today.

Follow up inspection:
-Dough machine (bowl and dough hook), onion slicer/food press, and inside of the pizza prep. cooler was in a clean condition.
-Cabinet was in a clean condition and rodent droppings were removed.
-Please continue with your pest control program and pest control measures.
