Routine inspection: Retail area coolers at or below 4 degrees C. Glass door freezer at -17 degrees C. Cake display coolers at or below 4 degrees C. Due to COVID-19 pandemic premise has ceased self serve station for baked products. Retail area clean and organized. Cake decoration station hand sink provided with liquid soap and paper towels. 200ppm quats available for use in container with wiping cloths stored in solution when not in use. Bread slicing and bagging area hand sink provided with liquid soap and paper towels. 200ppm quats available for use in labeled spray bottle. Back warewashing area 3 compartment sink dispensing 200ppm quats. 3 compartment sink setup for manual warewashing. Clean in place for all large equipment. Pan washer registers at or above 71 degrees C during the rinse cycle. Walk in cooler at 4 degrees C. Walk in freezer at -16 degrees C. General sanitation is satisfactory.
