203 - Food not cooled in an acceptable manner [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): A tray of cooked rice and cooked noodles made from the previous night were not cooled properly. Internal temperature of the rice was at 14C and the internal temperature for the cooked noodles was at 13C. Food products were stored in standup cooler behind the grill unit and ambient air temperature for the unit was at 4C.
Corrective Action(s): Food products were discarded. Ensure all food products are cooled from 60C to 20C in 2 hrs, then from 20C to 4C in 6hrs.

304 - Premises not free of pests [s. 26(a)]
Observation: 1 live cockroach was noted in the glue trap placed underneath the front pop dispenser and 1 live cockroach was noted around the drainage pipe for the front hot holding unit.
Corrective Action(s): There has been an on-going cockroach problem within the premises. Operator has an on-going contract with a pest control company organized through mall management.
Coordinated insecticide treatments have been done between mall management (for common areas), the restaurant owner, and other food vendors within the food court area to rectify the cockroach problem. On-going regular insecticide treatment will be needed to reduce and rectify the pest problem

Comments

Routine inspection conducted and the following were noted:
All cooler units less than or equal to 4C.
Freezer units at -18C.
Food stored in the hot holding units were at least 60C.
3-compartment sink satisfactory. Sanitizing compartment was filled with at 200ppm quats sanitizer.
Quats sanitizer at 200ppm.
General sanitation had improved from previous inspections.
hand washing station satisfactory.
All food items stored at least 6 inches off the ground and properly covered.
