Observation (CORRECTED DURING INSPECTION): No sanitizer was observed in the kitchen and in the front area during food preparation.
Corrective Action(s): Two sanitizing pails with chlorine bleach (100 ppm) made at time of inspection. Ensure that you always have bleach available for use when preparing food.

209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): 1. Onions stored inside the washroom.
2. Various toppings (curry, saag) were observed in the prep cooler without lids.
Corrective Action(s): 1. No food storage is permitted at any time in the washroom. Onions were moved out in the kitchen at time of inspection, stacked on a milk carton.
2. Toppings are to be fitted with lids when not in use.

210 - Food not thawed in an acceptable manner [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Fish fillets and saag observed defrosting at room temperature on a shelf. Fillets and saag were at a surface temperature of -2C.
Corrective Action(s): Fish fillets placed on bottom shelf of the walk-in cooler. Saag was placed back into the upper shelves of the cooler for defrosting. Fish fillets may be defrosted under cold running water if they are still packaged, or in cold water (changed every 30 minutes).

304 - Premises not free of pests [s. 26(a)]
Observation (CORRECTED DURING INSPECTION): Mouse droppings noted inside cabinet in the front corner of the dry storage room.
Corrective Action(s): Operator voluntarily discarded unpackaged food (e.g. lentils) and unpackaged food containers at time of inspection. Area inside the cabinet was cleaned and disinfected with 1 part bleach, 9 parts water. Ensure that you monitor the area for rodents and ensure that daily cleaning is conducted to avoid attracting pests.

Routine inspection conducted. The following observations were noted:

1. Temperatures
- Walk-in cooler at 2C
- Prep cooler at 4C (top) and 3C (bottom)
- Sweets cooler at front-of-house at 4C
- Ice cream freezer at -21C
- Stand-up freezer at -18C
- Chest freezer at -18C

2. Hygiene and Sanitizing
- Hand wash stations adequately stocked with hot/cold running water, liquid soap, and single-use paper towels
- Low-temperature dishwasher has a wash temperature of 120F and a final rinse chlorine residual of 100 ppm - good. Test strips present but were clearly oxidized - obtain new test strips and check your dishwasher daily to ensure that it is dispensing chlorine to sanitize
- Ventilation canopy in satisfactory sanitary condition

3. Pest Control
- It is highly recommended that you obtain the services of a professional pest control company

4. Administrative
- Chef has FoodSafe 1 (to be verified by sending in FoodSafe 1 certificate via email to the inspector)
- Permit is posted and up-to-date
