Observation (CORRECTED DURING INSPECTION): Eggs are stored in an open cooler stacked above the cooler edge. Temperature of eggs ranged from 4-12 degC.
Corrective Action(s): Move the eggs into another cooler so that they are kept under refrigeration at all times.

209 - Food not protected from contamination [s. 12(a)]
Observation: Foods e.g. bags of onions, etc and take out containers are being stored outside the store in an enclosement that is not fully enclosed. The gated area is enclosed on the far end with wooden fencing that has gaps i.e. area is not closed off to the elements.
Corrective Action(s): Foods and related products must be stored INSIDE the building. Or a fully enclosed area must be built as an extension of the building to store these products.

304 - Premises not free of pests [s. 26(a)]
Observation: Rodent droppings observed under the shelves in the front of the store as well as inside the cooler that has red tape on its door in the coffee bar area. Operator has a pest control complany on contract.
Corrective Action(s): Clean these areas using a bleach solution.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: There are several pieces of equipment that are not being used for its intended purpose e.g. coolers being stored for dry storage along the coffee bar area.
Corrective Action(s): Remove all equipment that is not being used for the business.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation:
1) The area just outside the walk-in cooler is being used to store recycled boxes when it should be used for cleaning, washing chopping up produce. This is where the 2-compartment sink and hand sink are located.

2) There's no paper towels in the dispensers in the staff washrooms.

3) There's plastic hanging from the tap of the 2-compartment sink (beside the dishwasher) that's used for directing water flow.
Corrective Action(s):
1) Remove the boxes and clean up the area for this purpose.

2) Refill dispensers with paper towels. If those dispensers are no longer working, replace them.

3) Remove the hanging plastic and attach a short hose as required. Ensure that the hose is not too long so as to cause a cross-connection issue.

Observation: Several items being stored outside on the deck that is not being used for the business.
Corrective Action(s): Remove all items not required for the business. This area can be used to temporarily store recycled boxes before they're disposed off in the recycling bin.

General Notes:
Coolers are below 4 degC. Display cooler has been fixed.
Dishwasher rinse temperature is 73 degC
Frozen fish are packaged and then placed on ice in an open area in the produce area for customers to buy. Fish temperature ranged from frozen to 7 degC. THIS PROCESS TO BE REVIEWED FURTHER.
Walk-in freezer temperature was -20 degC
