New heavy duty shelving installed inside the walk in meat cooler. Bottom shelves are >6in up above the floor to allow ease of cleaning. New wire rack shelving for air drying installed above the 3 compartment sink Sanitizer water at room temperature at 3 compartment sink. Quat sanitizer tested at 200ppm Meat cooler slider doors being maintained. Premises has a flashlight to verify cleaning Manager stated they have accountability procedures in place to ensure staff are following daily cleaning objectives.
