Observation: Wall mounted knife holder near ware washing sinks is made of unsealed wood. Wood is subject to moisture.
Corrective Action(s): Ensure that knife holder is finished to provide a surface that smooth, non-absorbent, easy to clean, and suitable for its intended purpose. Alternatively, another knife holder that meets these requirements may be provided in place of the existing one. Date to be corrected by: July 20, 2018.

Routine inspection conducted:

- Walk in cooler at 1 degree C. Food is covered, dated, and stored off the floor.
- Maketable at 2 to 4 degrees C (above) and 3 to 4 degrees C (below)
- Dough cooler at 1 degree C
- Salad cooler at 2 degrees C
- Beverage cooler at 1 degree C
- Reach in freezer at -20 degrees C
- A functional probe thermometer is available on site. Temperature records are maintained and available for review. Note: Temperatures are being recorded for both "taco cooler" and "salad cooler" however, only one of these coolers is available on site. Please ensure that temperatures being measured and recorded reflect available equipment.
- Quaternary ammonium compounds (quats) sanitizer is available at 200 ppm in labeled spray bottles. Sanitizer was prepared at 200 ppm quats in third compartment of manual ware washing sinks at time of inspection. Test strips available. Three sink plugs available.
- Utensils and equipment are stored in sanitary condition.
- Scoops are stored with handles outside of food product
- Hand washing stations are unobstructed and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
- Staff demonstrate good personal hygiene (clean clothing, hair secured)
- Staff washroom maintained in clean condition
- No signs of pest activity observed at time of inspection
- FOODSAFE requirements met at time of inspection
- Permit is posted at the front
Note: Please ensure that floor to wall junctions are being routinely cleaned as some debris was observed in these areas.
