210 - Food not thawed in an acceptable manner [s. 14(2)] Observation (CORRECTED DURING INSPECTION): Raw fish was being thawed at room temperature. Operator explained that the cold running water had just been turned off. Operator turned the cold running water back on to continue safely thawing fish. Corrective Action(s): Violation Score: 1 306 - Food premises not maintained in a sanitary condition [s. 17(1)] Observation: Walk-in cooler floor has built-up food debris as well as spilt liquids accumulating around perimeter. Corrective Action(s): Ensure the floor is cleaned and sanitized. Clean and maintain the walk-in cooler floors on a regular basis to avoid build-up of food debris. Routine inspection conducted. -Hand wash station is fully stocked with liquid soap, paper towels, and running hot/cold water -200ppm QUATs spray bottle on-site and in use -High Temp. dishwasher achieves 71C at plate level. -All coolers (walk-in cooler, display cooler, prep coolers) are below 4C. *Operators are replacing top compartment doors of prep cooler* -Stand-up freezer is below -18C. -Dry storage is satisfactory. Pest proof containers are used and items are stored above the ground. -No signs of pest activity. Pest company is contracted and traps are set *Backdoor should be replaced to a door that covers all gaps. Currently there is a roll down "garage" door that covers that area when there are no deliveries or back door use.* No signature required due to COVID-19
