Observation: Dishwasher lacked any residual sanitizer, no test strips available on site for monitoring.
Corrective Action(s): 1) Switch to using only single use disposable dishes OR wash dishes in dish washer and manually sanitize dishes in sink (dishwashing sign with sanitizer mixing instructions provided).
2) Adjust/repair dishwasher so a 50ppm chlorine sanitizer is consistently available. Due: tomorrow (Dec 1, 2017)
3) Purchase corresponding test strips and test dishwasher daily

Manager stated that a custom metal cover for this area is on order but arrival/installation date is unknown. Have this area repaired or metal sheet installed within one week (December 7th, 2017) or enforcement action such as an order or ticket ($230) may be taken.
