General sanitation - satisfactory;

Bar:
Bar hand washing station supplied with hot/cold running water, soap, and paper towels.
Bar coolers at 3.8 C;
Freezer (glasses) - satisfactory;
An ice-scoop is stored safely at the time of inspection.
Quat sanitizer at 200 ppm;

Kitchen:
All coolers (walk in, 3 prep units, grill drawers, under-counter) at < or = 4.0 C;
Food storage (cold items) - covered with lids, labeled, dated with prep date.
Freezers (walk in, ice cream) at < or = -18.0 C;
Small freezer near the grill - satisfactory;
Note: Hot holding unit (pizza warmer) - not in use at the time of inspection;
Low temperature dishwasher dispensed 100 ppm of Chlorine solution;
Ice machine was maintained in sanitary condition.
Dry storage area - organized (dry food items stored off the floor & covered);
Staff washroom - clean; hot & cold running water as well as liquid soap & paper towel - available;
Note: Observed good cooling procedures (in a ice-bath & shallow trays in the walk-in cooler);

Reminder:
- A screen door is required for a back door if it is to be left open.
- All liquid soap dispensers must be stocked with liquid soap all the time. It was no liquid soap in a kitchen (corner) wall mounted dispenser (Corrected at the time of inspection).
- Salad cooler (in the kitchen) - so much water on a low level (it is possible that a drainage pipe is blocked ).
- Surface sanitizers available in designated red buckets with presoaked wiping cloths and spray bottles but a bit low in some buckets; Ensure Quat at 200 ppm;
