301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): Ice scoop near pick up drive thru windo was sitting in a dirty container.
Significance: The dirty container contacs the ice scoop and can cros-contaminate the ice.
Corrective Action(s): Employee immediately washed and sanitized the ice scoop and its container. This should be done regularly.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Low-temperture dishwasher could not reach minimum rinse temperature of 120F (tried 5x - max temp was 112F). Chlorine residual was 100ppm
Significance: A temperature of 120F is required to effectively break down leftover grease/debris on dishwasher (in combination with detergent). Sanitizer cannot work effectively if there is still debris leftover on dishware.
Corrective Action(s): Discontinue use of dishwasher and wash dishware with 3 compartment sink until dishwasher is proven to achieve 120F. Operator should keep records of sanitizer concentrations and temperatures of dishwasher.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Observation 1 - Door handles to coolers/freezers were dirty
Observation 2 - Basement walk in freezer had a handful of pastries and other debris on the floor
Observation 3 - Sauce spills on floor and under shelving in back left of basement dry storage room. Many shelving units had debris underneath.
Observation 4 - All equipment in kitchen had some debris underneath.
Observation 5 - Floors were extremely greasy/slippery. A paddle was observed at pick up drive through window.
Significance 1 - Door handles are touched many times throughout the day by different people. Cross contamination of debris from handle to clean hands can occur.
Significance 2/3/4/5 - Spills and debris can attract pests such as rodents and/or cockroaches. Greasy floors is also a physical hazard to employees.
Corrective Action(s): Clean these areas immediately. Ensure that these areas are cleaned at an increased frequency.
