Routine inspection Kitchen staff wear hair net. Staff hand washing noted. Hand washing stations fully supplied with hot&cold running water, liquid soap and paper towels in dispenser. Ensure no obstruction to hand sink at any time. Food in cooling units measured at or below 4 degree C. Walk in cooler at 4 C or colder. Walk in freezer measured at -22 C. Food in walk ins organized and raw cooked separation observed. Gravy in hot hot holding measured at 70 C. Temperature monitoring log maintained. Dishwashing temp, Chicken cooked temperature recorded. Cooling units temp recorded. No concerns from past dates. QUAT 200-400 ppm available in spray bottles and sani buckets. Wiping clothes are to be stored in sanitizer. Cutting board and sandwich prep station noted clean and staff noted sanitizing counter tops and work tables. 3- comp prep sink maintained. Dishwasher registered at 75 degree C at final rinse water.
