Observation (CORRECTED DURING INSPECTION): Surface sanitizer was not available at the time of the inspection.
Corrective Action(s): Operator prepared surface sanitizer at 100ppm chlorine solution. Ensure to have surface sanitizer available at ALL times to sanitize food contact surfaces (ie meat slicer).

Observation (CORRECTED DURING INSPECTION): Build up of meat debris on the meat slicer.
Corrective Action(s): Wash and sanitize the meat slicer blades and the unit. Ensure to clean off any leftover food debris after each use.

Comments

- General sanitation is satisfactory
- All coolers (display, upright) < or = 4C. Note: The display/walk in cooler were not in use at the time of the inspection. It is only used on weekends.
- All freezers (walk in, chest, upright) < or = -18C
- Daily temperature logs are to be started immediately for ALL refrigeration units.
- No signs of pest activity at the time of the inspection.
- Bulk food items stored in bins. Ensure that the scoop handles do not touch the food items.
- Random food items (i.e. prepackaged meats) checked for expiration dates, condition of packaging, and signs of deterioration. All in good condition.
- Dry storage area is organized and food items are kept at min 6inches (15cm) off the floor for better cleaning, air circulation, and preventing pest contamination.
