Observation (CORRECTED DURING INSPECTION): Dishes located within bus bin under front hand sink were observed with dried on debris/spills/staining. A small amount of liquid was located within bus bin. Note: It was stated that these dishes are not in use.
Corrective Action(s): Bus bin and dishes placed into dishwashing area to be washed, rinsed, and sanitized. Ensure that all equipment/utensils/food contact surfaces are maintained in sanitary condition to (1) limit potential contamination of food and (2) limit potential attraction of pests. Utensils/equipment should be kept in sanitary condition, even if they are not being used.

Observation: Few small flies observed in back area near chemical storage, laundry bag, and dry storage.
Corrective Action(s): Ensure that fly population is controlled. Remove any potential pest attractants and follow recommendations of pest control operator. Date to be corrected by: July 17, 2019.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1. Small amount of liquid observed on underside of P-trap located beneath front hand sink.
2. Small amount of liquid observed dripping from ceiling of walk in cooler. No food/beverage located under drip and a bucket is in place to catch liquid.
Corrective Action(s): Ensure sources of liquid are located and addressed to prevent further leakage. It was stated that a work order is in place for the walk in cooler. Equipment/utensils removed from beneath hand sink to be washed, rinsed, and sanitized. Do not store any food/equipment/utensils underneath the hand sink located in the front area. Date to be corrected by: June 24, 2019.

Routine inspection conducted:

- Walk-in cooler at 2 degrees C. Food is covered, stored off the floor, and raw and ready-to-eat items are properly organized.
- Left preparation cooler at 3 degrees C (below) and 4 degrees C (above)
- Right preparation cooler at 4 degrees C (below) and 5 degrees C (above)*
- Beverage coolers at 1 to 4 degrees C
- Freezer at -15 degrees C
- Hot holding internal temperatures (rice, steam table) at 60 degrees C or more
- Hand washing stations (front/back) are unobstructed and supplied with hot and cold running water, liquid hand soap, and single use paper towels
- High temperature dishwasher measured 75 degrees C at utensil surface during final rinse (minimum 71 degrees C at utensil surface)
- Quaternary ammonium compounds (quats) sanitizer measured at 200 ppm quats (buckets with wiping cloths, dispensing unit).
- Washrooms maintained in clean condition.
- Permit posted at front
- Temperature log in use; however, dates are missing. Ensure temperatures are being measured and recorded consistently.
- It was stated that premises is serviced by a pest control operator every three months. Ensure that service reports are available for review by the Environmental Health Officer.
- FOODSAFE requirements met. Certificate produced expires in 2020.
*Monitor to verify that temperatures of 4 degrees C or less are maintained and take corrective action as necessary. Reminder to keep covers closed when not in use.
