209 - Food not protected from contamination [s. 12(a)]
Observation: Observed uncovered food items throughout the premises:
> In walk-in cooler: 2 inserts of diced tomatos and 1 insert of dressing
> In dry storage area: 2 bags of salt and 1 bag of garlic powder
Corrective Action(s): All stored food items must be protected from contamination by:
> Ensuring food is stored at least 15cm above the ground
> Covering opened food items
> Transfering the leftover contents of opened dry goods into pest proof containers

Observation: Significant amount of drain flies noted in the dishwashing area. According to staff on site, the October pest control service has not yet taken place.
Corrective Action(s): Contact pest control company for service immediately. Service must include a target for drain flies.
> Report must be forward to EHO for review.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Cleaning is required in, but not limited to the following areas:
> Dishwashing area: food debris under the 2 compartment sink and food scraps left in the rinse area just before the dishwasher.
> Dry storage area: food debris under the shelving units and ice machine. Spilled dry product (salt) and onion skins on the bottom shelf of the rack in front of the ice machine.
> Cook line: food debris underneath the cooking equipment. Grease accumulation on the venf hood baffles directly above the deep fryers.
> Hot water tank: droppings surrounding the tank.
Corrective Action(s): Clean and sanitize the premises immediately. Remove rodent droppings.
> Consistent cleaning and sanitizing will help to monitor rodent activity.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1) Handsink by dishwashing area is leaking - currently not in use due to a pipe leak. Staff informed that service is to take place tomorrow.
2) Drawer coolers that are below the griddle have air temperatures above 10C (right side was 14.5C, left side was 12.1C). Potentially hazardous foods stored inside these drawers had internal temperatures that measured above 4C.
Corrective Action(s): 1) The handsink must be serviced tomorrow and fully functioning. Follow up inspection will take place on October 28 to verify. Until then, handwashing must take place at the handsink by the cook line.
2) Do not use these coolers to store potentially hazardous foods. Recommended to staff to use these coolers as little as possible as the surrounding cooking equipment significantly affect the air temperature. Service the cooler to ensure it can maintain 4C or colder at all times, or do not use at all.
