Observation: - Mouse dropping noted in the following areas:
- floor in bar under/behind coolers
- floor behind dishwasher chemicals and under shelving in dishwashing area.
- on platform under ice machine
Corrective Action(s): - Pull out equipment, shelving and any buckets/bins from the wall and remove all droppings. Disinfect areas.
- Continue to monitor these areas daily and clean up any additional droppings noted.

Observation: - Gaps in doors noted at front entrance doors and doors to the patio.
Corrective Action(s): - Replace door seals so that gaps are no longer present. This has also been identified by Pest Control Techinician on report.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: - Food debris, grease and grime noted in hard to reach areas of the kitchen including:
- floor of walk-in cooler under shelving
- floor under prep cooler, particularly around wheels
- floor under cooking line
Corrective Action(s): - Pull out all equipment and remove all food debris and thoroughly scrub to remove grime from areas noted above. [Correction date: 25-Jun-2019]

Comments

- General sanitation of servery area and front sandwich station satisfactory. Sanitation of areas in kitchen identified in violation above need to be addressed.
- Handsinks equipped with hot and cold water, liquid soap and paper towel. *Re-mount/replace paper towel dispenser at handsink adjacent to warewashing area.
- Mechanical dishwasher operational and adequate sanitizer residual present to sanitize dishes. 100ppm chlorine detected on dish after cycle.
- Coolers were operating at acceptable temperatures (4C or colder):
- Walk-in cooler 1C
- 3 door line cooler (kitchen) 4C
- 2 door line cooler (kitchen) 4C
- Drawer cooler (under grill) 4C
- Line cooler (sandwich station) 3C
- Glass door beverage cooler 4C
- Countertop tropicana cooler 4C
- Dessert cooler 4C
- Bar cooler (with keg) 3C
- Freezers were maintaining product in a frozen state:
- Walk-in freezer -21C
- Undercounter freezer (cook line) -12C
- Ice cream freezer -18C
- Hot holding of potentially hazardous foods was at acceptable temperatures (60C or higher)
- Au jus (hot holding unit cook line) 70C
- Soup 65-70C (hot holding unit server station)
*Hot holding unit at sandwich station not yet in use for the day
- Quats sanitizer solution present in buckets with wiping cloths immersed in solution for use on food contact surfaces. Solutions checked measured 200ppm.
- Dipper well operational and in use for scoops in server station.
- In use utensils at cook line stored in ice water. *Ensure the utensils are cleaned and sanitized every 4 hours (or replaced/swapped with clean utensils every 4 hours).
- Ice machine appears clean/maintained. Scoop stored outside on bin.

Advised Supervisor of complaint received regarding rodent (mice) and ant activity. Supervisor has reported the following measures are in place:
- Pest control contract is in place with Orkin. Service is provided every 2 weeks. Reports from the most recent services (27-May, 13-June) were provided for viewing at the time of the inspection
- Reports indicate limited activity (1 mouse caught)
- Dry goods are stored in pest proof bins and bread is stored in the walk-in cooler overnight.
- Holes have been filled. Monitoring is in place to see if additional holes appear.

As per violations above, all droppings must be removed, areas disinfected, and a higher level of sanitation must be maintained. Additionally, follow all recommendations of Pest Control Technician. Issues related to sanitation and pest proofing have been identified in reports, but not addressed.
