209 - Food not protected from contamination [s. 12(a)]
Observation: 1. Improper dispensers, containers with broken or missing handles, were used and stored improperly in bulk food containers.
2. Some stainless steel forks, spoons and knives were stored in a large pitchers with the business ends facing up.
3. Bleach sanitizer spray bottle for front of house was detected with over 200 PPM chlorine residual (chlorine test strip bleached out).
Corrective Action(s): 1. Remove all improper dispensers and replace with dispensers with proper handles. Store in a manner where the handles do not come into contact with food.
2. Pour out all stainless steel utensils on a cleaned surface and reorganize and store in a manner where food handlers do not need to touch the business ends to take utensils out.
3. Bleach sanitizer solution diluted. Reviewed proper concentration required and 200 PPM chlorine residual was detected in the newly diluted spray bottle for the front of house.

Observation: Dust buildup noted on the ceiling above the dishwashing area.
Corrective Action(s): Clean and sanitze to avoid dust from dislodging from the ceiling and contaminating cleaned dishwares or food being prepared in this area.

Routine inspection conducted today:
All handwash stations, including units located in the washrooms, were accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were at 4.0C or below.
All freezer units were at -18.0C or below.
Food in general is stored protected and in the proper storage hierarchy.
Hot hold units for rice and sauces were holding food at 67C, 65C and 62.0C.
Interior of the ice machine was noted sanitary. Cookline sanitation was satisfactory.
Sanitizer bleach solution available in a spray bottle. Bottle in the kitchen was noted with 200 PPM chlorine residual.
High temperature dish machine was able to reach 189F at the gauge level and 72.3C at the plate level during the rinse cycle.
No signs of pest activities noted during the inspection.
General sanitation satisfactory.
FOODSAFE level 1 certificate verified for staff onsite.
