Observation (CORRECTED DURING INSPECTION): Found large pot in the cooler of cold soup, which is cooked then taken to cooler to cool.
Corrective Action(s): Must cool foods in small portions, not in large pots. Divide soups into smaller containers so they cool quickly: cool 60 C to 20 C in 2 hours, cool 20 C to 4 C in 4 hours in cooler

Observation (CORRECTED DURING INSPECTION): Found sanitizer spray bottle to have in excess of 200 ppm chlorine.
Corrective Action(s): Must ensure surfaces are sanitized with 100 to 200 ppm chlorine: 1/2 tsp bleach per litre water.

Observation (CORRECTED DURING INSPECTION): Observed staff washing hands with gloves still on, and wool gloves underneath.
Corrective Action(s): Must remove gloves when dirty, wash hands with liquid soap and water, dry with paper towel, then place new gloves on.
DO NOT use wool gloves as they are not washable and can contaminate food.
