- Mechanical Dishwasher: High Temperature = Ok. Ensure all food contact surfaces are being washed and disinfected after use or on a timely manner. (ie: 3-4 hours)
- Wiping cloth storage/steamer wand cleaning discussed. Wiping cloths, used on food contact surfaces are to be stored in a sanitizer at all times.
- Food Storage: Ok
- Sanitary Facilities: Ok
- Chemical Storage: Ok.
- Sanitation: Clean and organize the storage area next to dishwasher/2 compartment sink. Any unused items are to be removed to free up space.
- Staff Hygiene: Reviewed.
- Garbage, Recycling and Composting Disposal: All items are to be stored in covered containers.
- Pest Control: No signs noted. Monitoring to be conducted.
- Ice bin cleaning discussed. Ice scoops are not to be stored inside the ice. Store in a sanitary manner.
