Observation: Undercounter cooler (under pastry display area) measured 8C. Cooler was not storing much at time of inspection.
Corrective Action(s): Staff adjusted the cooler's temperature setting at time of inspection. Cooler's ambient air temperature dropped to 5C by end of inspection. Ensure this cooler is capable of maintaining temperatures at 4C or colder. Please continue to monitor this cooler.

Comments

- Routine inspection conducted.
- Hand washing sinks were properly supplied with hot/cold running water, liquid soap, paper towels.
- QUATs sanitizer solution available in sanitizer pails at 200 ppm. **Ensure wiping cloths stored in sanitizer solution are completely submerged in the solution - sanitizer pails should be filled up more.
- High-temperature dishwasher reached 73C at the dish surface during final rinse cycle. Good - minimum of 71C at the dish surface is required.
- All other coolers measured 4C or colder.
- Freezer temperatures satisfactory.
- Hot-holding available at 60C or hotter.
- Accurate thermometers available. Temperature logs available.
- Equipment maintained in sanitary conditions.
- General sanitation satisfactory.
- Dry storage area satisfactory.
- No signs of pest activity at time of inspection. Regular pest control servicing is still in place.
- Staff onsite had FoodSafe.
