Well maintained and operated. Sanitation is very good. Refrigeration measures < 4 C. Freezer temperatures measure < -18 C. Hot-holding measures > 60 C. Dishwasher final rinse temperature measures 75 C. Spray sanitizer measures 200 ppm Cl. Wiping cloth (chemically treated Quix Plus sanitizing towels are in use) sanitizer measures 200 ppm Q.
