Observation (CORRECTED DURING INSPECTION): Sanitizer bucket for kitchen prep area measured <10ppm chlorine at start of inspection
3 compartment sink observed to be around 50ppm chlorine

Sanitizer bucket corrected to be measure 200ppm bleach during inspection (buckets used are approximately 4L)
3 compartmnet sink correct to measure 100ppm bleach during inspection (around 8 capfuls of bleach to fill line (~2 inches from top of sink))

100ppm bleach sanitizer solution is made by mixing 1/2 tsp household unscented bleach : 1 L water

All surfaces in kitchen and back prep area are to be wiped to be sanitized.

All products were either in original packaging or covered inside coolers.
Storage area was well-organized.

Pre-made pizza (dough and pizza sauce) stored at room temperature in wheeled bakery rack beside pizza prep station and oven
Stored at room temperature for lunch rush only; after 2 hours, pizza is to be stored covered in walk-in cooler
