304 - Premises not free of pests [s. 26(a)] Observation: Some droppings found underneath shelving in the dry storage area. Corrective Action(s): Clean with a 1/10 bleach solution. A pest control company comes here regularly. Invoices reviewed onsite. Violation Score: 3 308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)] Observation (CORRECTED DURING INSPECTION): Washroom paper towel dispenser was empty. No food service was taking place during the inspection. Corrective Action(s): Corrected. Violation Score: 3

Comments

All coolers were < 4 C. All freezers were < -18 C. Bleach solutions were refilled to 100 ppm. Remember that 1 tsp. per liter is all that is required. Dishwasher final rinse cycle reached 71 C at the plate level. Hand sink in the kitchen supplied with hot and cold water, soap and paper towels. Discussed the usage of the kitchen during the inspection.
