-Kitchen appears clean and well maintained.
-Handsink supplied with liquid soap and paper towel
-Walk-in cooler was 2C
-Food stored in a manner to prevent contamination - items were covered or wrapped and raw meats stored beneath ready to eat items and vegetables.
-Walk-in freezer was -24C
-Records for cooking temperatures and cooler/freezer temperatures present. Corrective action recorded when temperature requirement is not met.
-100ppm chlorine detected in dishwasher rinse cycle. Test strips present for monitoring chlorine residual. Records present although have been missed for the last 3 days. Review procedures with staff and importance of ensuring dishwasher is sanitizing dishes effectively.
-Quats sanitizer (200ppm) present for sanitizing food contact surfaces.
-Dry storage area is well organized with food stored on shelving. *Recommend storing all dry goods in pest proof containers.
-No signs of pest issues at the time of the inspection. Pest Control contract in place with monthly service. Adhesive traps present for monitoring.
