Observation (CORRECTED DURING INSPECTION): Sanitizer solution not available.
Corrective Action(s): Bleach is available onsite. Use the bleach to mix a bleach sanitizer solution (mix 2 ml of bleach to 1 L of water for a 100 ppm chlorine mixture) and have that readily available at all time when the restaurant is in operation.

Operator made a sanitizer solution. 200 ppm chlorine residual was detected.

Observation (CORRECTED DURING INSPECTION): Sliced mushrooms stored in a cardboard box.
Corrective Action(s): Transfer the sliced mushrooms to a food grade container. All processed produce must be stored in a food grade container as it is the cleanliness of the cardboard cannot be guaranteed, especially if there are chemical residual in the box that may get transferred to food.

Observation: 1. Dust noted on the light fixture in the walk-in cooler.
2. Black buildup noted on the bottom door gasket in the reach-in prep cooler.
3. Grease buildup noted on the vent hood (note: Due for professional cleaning on Nov 30, 2022).
4. Debris noted on the floor by the back window.
5. Dust noted on the ceiling above the fume hood.
Corrective Action(s): Clean the aforementioned areas and maintained in a sanitary condition at all time.
