Observation (CORRECTED DURING INSPECTION): Sanitizer spray bottle had <50ppm chlorine. 200ppm chorine solution was prepared at this time.
Corrective Action(s): Ensure 200ppm chlorine is available for use at all times. Make the solution every 2 weeks.

Comments

Routine inspection conducted:

-Handwash station adequately supplied with liquid soap, paper towerls, and hot/cold running water.
-Coolers operating at/below required temperature of 4'C; Freezers operating at/below required temperature of -18'C.
-Kulfi in production at this time. No issues observed.
-All parts disassembled after each cycle (30-40 minutes) --> washed and sanitized using bleach or ones that fit go into the dishwasher.
-Large pots washed down using hose --> sanitized in 200ppm bleach solution.
-High temperature dishwasher achieved 73.4'C at the plate level after final rinse.
-No evidence of pest activity observed at this time.

General sanitation of the facility satisfactory, but the following areas require improvement:
Floors underneath 3 compartment sink and production area.

NOTE: New mechanical dishwasher installed. Already approved by the previous inspector. Health inspector to check the file.
