Corrective Action(s): - Use scoopers with handle-up out of the food for better food protection from worker hands

-keep foods covered . Insert covers at preparation coolers should be on during off-peak hours

-Cardboard flats/egg flats used to soak up oil under fryers

In-use utensils (rice spatulas, ice scooper) kept in water changed every hour as per operator -maintain ice level there as well

Bleach sanitizer bucket >100ppm as per test strips -towels in solution when not actively used

General sanitation good, no signs of pests -All Catch Pest Control comes in regularly -operator to email me the last work report

Handsinks adequately stocked and clear for use

Reviewed COVID-19 Protocol:
-sick warning signs missing for the side entrance -place the signs there as well
-Along with the dining tables, seats and back rests must be cleaned and sanitized as well between customers
-Face coverings must be worn by kitchen staff as well due to there will be times when they are not 2m physical distancing
-dining tables are marked off for 2m physical distancing
-front staff are wearing masks
-maximum occupancy indicated on front door
