205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Cheesecake, carrot cake, and soy milk was stored in the display cooler above 4 degrees C for less than 2 hours. Staff member stated that they checked the cooler temperature at 12 PM during which it was at or below 4 degrees C.
Corrective Action(s): Above noted food items were moved to the walk-in-cooler which was at or below 4 degrees C. Make sure all cold potentially hazardous food is stored/displayed inside a cooler that is maintained at or below 4 degrees C throughout the day.

301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): Surface of meat slicer had food debris over it and was not maintained in a clean condition. Staff member stated that it was last used on Tuesday this week.
Corrective Action(s): Staff member cleaned and sanitized the slicer at the time of inspection. Please thoroughly wash, rinse, sanitize, and air dry all components of the slicer every 4 hours between use, between raw and ready to eat food, and after final operation each day to maintain it in a sanitary condition.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Upright cooler was above 4 degrees C (6 to 6.8 degrees C) at the time of inspection (for approximately 1 hour). It was at 3 degrees C earlier this morning according to the temperature log and staff member stated that they checked it during luncht time at 12 PM as well when it was below 4 degrees C. The display cooler ran a defrost cycle during the inspection, ended the defrost cycle based on the display panel, and was still above 4 degrees C.
Corrective Action(s): Adjust/repair/-re-service/replace the display cooler so that it maintains a temperature at or below 4 degrees C; Correct within 1 week. Do not store any potentially hazardous food (e.g. cheesecake, carrot cake, soy milk, etc.) inside this cooler until it is maintained at or below 4 degrees C; Correct immediately. Please contact the district Environmental Health Officer for a follow inspection once the display cooler is maintained at or below 4 degrees C by next week.

Comments

Both handsink in the kitchen area and handsink near the front service area were supplied with liquid soap, hot and cold running water, and paper towels.
Walk-in-cooler was at 2.7 degrees C (4 degrees C or less) and had a thermometer.
Walk-in-freezer was at or below -18 degrees C (near -22 degrees C) and had a thermometer inside it.
Temperature records were being maintained.
No hot holding of food was occurring at the time of inspection.
Probe thermometers were available. Cooking/reheating (at or above 74 degrees C / 165 degrees F) and hot-holding (at or above 60 degrees C / 140 degrees F) temperatures were reviewed with the staff member. Raw meat is not used on-site.
Prep. sink was in good working order.
Dishwasher final rinse temperature was at 78 degrees C (71 degrees C or hotter) at the plate. Display panel to monitor the final rinse temperature was in good working order.
200 ppm QUATS sanitizer was available from the dispenser and inside the spray bottle.
No signs of recent pest activity were present at the time of inspection.
Staff member on shift had a FOODSAFE Level 1 certificate valid until July 21, 2023.
Permit to operate was posted however the decal on it stated "expired March 31, 2014". Please post the current decal on it each fiscal year.
