Comments

Premises actively manufacturing at the time of inspection and so the floor and working areas have doughs and flour all over. Hard-to-reach areas are maintained in sanitary condition. Cleaners come after bakers leave and perform thorough cleaning of working areas and equipment
Hand washing stations stocked with liquid soap and paper towel; paper towel in a dispenser in the bathroom now
Hot and cold running water available at all sinks
Large two compartment sink used to manually wash utensils
Bleach sanitizer available on site and in use; detected 100 ppm of residual chlorine
Walk-in cooler at 4 C or lower; walk-in freezer at -18 C or lower.
No sign of pests noted at the time of inspection.
*Operator replacing old utensils and equipment slowly; weekly cleaning of racks (power washed). Ensure to use sanitizer to sanitize after power washing*
