Observation (CORRECTED DURING INSPECTION): Pepperoni pizzas were stored at 30 degC. Warmer was turned off. Operator wasn't able to tell me how he was monitoring the times.
Corrective Action(s): Discard the pizzas. As was made clear prior to pizza being approved for sale, pizzas must be kept in a warmer at or above 60 degC. And if they're to be kept at lower temperatures, there must be a system for monitoring the time and to make sure the pizzas are discarded after 2 hours.
