Observation (CORRECTED DURING INSPECTION): Container of cheese probed internally at 11C at the prep cooler by the cookline.
Conatiner of green onions probed internally at 16C at the prep cooler by the cookline. This insert container was double stacked which causes insufficient cooling.
Corrective Action(s): Cheese discarded. Green onion moved a different location.

Observation: 1. Ice machine observed to have some grime.
2. Handless scoops stored in raw food. Other scoop handles observed in contact with food in dry ingredient containers.
3. Raw egg stored above cooked food in the back glass door cooler
4. Dish sitting on top of vegetable.
5. Bag of flour observed stored on the floor.
Corrective Action(s): 1. Please deep clean ice machine and sanitize.
2. Please acquire a scoop with handle for the raw food (calamari). Please ensure scoops are stored so handles are not in contact with the food.
3. Please reorganize the fridge to ensure raw food is stored below ready to eat or cooked foods
4. Please do not have bottom of plates or containers in direct contact with food. Bottom of plates or containers may have contamination that would be transferred onto the food.
5. Please do not store food directly on the floor unless they are in pest proof container.

- Screen door at the back door appears loose with big gaps where flies and rodents can go through and enter the premise. Please fix the screen.
- Please check temperature of all cooler and freezers twice a day and document on a log sheet.
