Observation: Ice machine was found to have bacterial growth along the dispenser area of the ice machine.
Corrective Action(s): Ensure ice machine is cleaned and sanitized on a regular basis to prevent potential contamination of ice. Ice machine was turned off at the time of inspection for cleaning and sanitizing.

Comments

-Walk-in cooler was at 4C.
-Prep coolers (three units) were at 4C (top and bottom). Ensure food is not placed above the fill line, otherwise the foods may not be maintained at/or below 4C on a consistent basis.
-Upright freezer was at -15C.
-Hot holding insert was greater than 60C (no foods in the hot holding cabinet at the time of inspection). Soup was cooked to greater than 74C prior to hot holding.
*Inserts of vegetables were placed on ice - ensure the ice is sufficient to surround the food to maintain temperatures at/or below 4C. Recommend using mixture of ice and water to maintain food temperatures.
-High temperature dishwasher had a final rinse of 76C on the dish surface on consecutive cycles (minimum of 71C required for sanitizing).
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats sanitizer dispenser was at 200ppm.
-Sanitizer pails were labelled and tested at 200ppm. Sanitizer pails changed every 2 hours. Spray bottle was tested at 200ppm.
-Dicer was found to be clean and sanitary. Dicer was properly disassembled for cleaning and sanitizing after each use.
-Foods properly stored off the ground and protected from potential contamination.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-Washroom clean and sanitary. Handwash station supplied with liquid hand soap and single use paper towels.
-FOODSAFE Level 1 equivalence valid until January 01, 2028.
