Observation (CORRECTED DURING INSPECTION): The sanitizer (quats) concentration measured at less than 50 ppm in three sanitzer buckets -2 kitchen, 1-front area with wiping rags inside.
-operator prepared the new sanitization in all three buckets and contration measured at >200 ppm in all three buckets. Corrected during inspection
-sanitizer concentration (Quats) must >20ppm at all times.
-Frozen yogurt manchine not cleaned and sanitzed daily to as required by sanitation plan.
-follow your sanitation plan and clean, sanitize the yogurt machine as per your sanitation plan. Corrected today during inspection.
-All the food contact surfaces must be cleaned to remove food debris, washed and rinse, then sanitize for 2 minutes in sanitzer and let them air dry or use the dishwasher to clean salad strainer. Corrected today during inspection.
