Generally well maintained and operated. Sanitation is excellent. Refrigeration measures < 4 C. Freezer temperatures measure < -18 C. Spray sanitizer measures 200 ppm Cl. Glass washer final rinse residual measures 50 ppm Cl.

The dishwasher and the walk-in cooler is not accessible as the kitchen is not in use at the time of inspection. Operator will advise our office of the dates and hours that the kitchen will be in use in the coming weeks so that a re-inspection can be scheduled to coincide with the time that the kitchen is in use.

The ice-machine must receive a regular CIP procedure (thorough deep cleaning and sanitizing of internal parts and flushing of internal plumbing to remove mold/slime build-up from contact with water). The sanitation instructions can be obtained on the manufacturer's website and also (sometimes) on the inside of the front panel of the machine. If a serviceman performs the procedure, then a copy of the invoice can be emailed to our office. If a RCL member or staff performs the procedure, then photographs or a video can be taken to confirm/verify that the procedure has been done.
