-Dry storage room requires organization.

Hand sinks were supplied with hot and cold water, soap and paper towels.
All coolers were < 4 C.
All freezers were < -18 C.
The dishwasher reached > 71 C at the plate level.
No evidence of pests.
Reviewed cooling procedures for pho broth with the owner. Broth is placed directly in the walk-in freezer after cooling.
Ice machine was clean.
General sanitation was satisfactory.
